A recipe for Pancake Day
To celerate Pancake Day coming on the 28th of February, Executive Chef Alexandre Nicolas has created the Socca-style Pancake for you to do at home.
The socca is a thin crêpe made with chickpea flour, olive oil and water, and fried until crispy. It is a favourite from the food markets in Nice. Alexandre chose to reinterpret it as a crêpe filled with Mediterranean flavours such as taggascia olives, sun-dried tomatoes, rocket, green beans and quails' eggs. A light and tasty option to celebrate Shrove Tuesday!
